The millennial history of ice cream is filled with references to sorbet. There are traces of it as early as 7th century B.C. China, later appearing in the Middle East, where the term sorbet originates, based on the Arabic “sharba,” meaning “fresh drink.” It then lands in Sicily, where snow was stored in icehouses or “neviere.” The oldest recipe for a preparation similar to “sorbet” dates back to the Renaissance, while the first recipes, complete with ingredients and processing, are written in the 17th century. In 1775 the first book entirely dedicated to this art was published in Naples, by Stamperia Raimondiana: “De' sorbetti,” (About Sorbets) by Filippo Baldini.
In the most sumptuous receptions of the seventeenth century, guests were amazed by serving sorbets among other delicacies. It must have happened in the Loggia dei vini too.
Today, ice cream is one of the most popular desserts in the world; it is linked to an idea of freshness, leisure, pleasure and strolling. Transcending social classes, ages, genders, latitudes.
